Eating healthy involves adequate servings of vegetables. One of my favorites is broccoli rabe. It has a slight bitter taste which I actually enjoy. It is a good source of vitamins A, C, K, and calcium, iron and potassium. It is quite easy to prepare. There are suggestions to boil in order to remove the bitter taste. However, there is a risk of losing the nutrients when overcooked. Pictured: Steamed and sauteed with olive oil, sliced garlic and dried onion flakes. Add optional red pepper flakes or seasoning to taste.
